Harvie Stuffing with Chicken Chorizo

We made an all-Harvie Thanksgiving dinner and cooked this up with the delicious items in our Harvie box. It came out great and the chorizo added a cool new spin to this classic Thanksgiving dish. Highly recommended!

Ingredients

1 Tbsp butter

1 pack of 4 chicken chorizo sausage from Salty Pork Bits

1 large onion, diced

1 cup diced celery

1 half loaf Mediterra farm bread, chopped into 0.5-1” cubes

1-2 tart apples, cored and cut into .5” cubes

1 Tbsp chopped fresh sage

2-4 cups stock

Salt and pepper to taste

Instructions

Preheat oven to 425.*

In a large frying pan heat butter and saute onion and celery over medium heat until translucent. 

Add all 4 sausages, squeezing the meat out of the casing. Saute with onions and celery until cooked through. 

In a large bowl, mix the bread cubes, apples, sage, onion and sausage mixture, and stir until well mixed. 

Add the stock 1 cup at a time and stir until you reach a consistency that is moist, but not too soggy.

Add salt and pepper to taste.

Stuff into turkey or transfer to baking dish

Either bake with turkey or bake in the oven with the rest of your thanksgiving feast for 35 minutes in the baking dish. Bake until the bread on the top is a nice golden brown.*

 

*This is a fairly forgiving dish, so feel free to pop it in the oven with whatever else you have baking at the temp the oven is at. Just tweak the cook time accordingly and check it periodically to get it cooked exactly to your liking.
