Mussels, Cream Cheese, Black Olive, and Spring Onion Spread on Toast

Tip: This spread is very popular on a tapas board with some crunchy and pickled vegetables. Serve some gherkins and radishes alongside it, a ‘turn‘ of black pepper and a garnish of garden cress. Good with brown baguette lightly toasted. 

Ingredients

1 can of mussels

2 big tablespoons of cream cheese

5 black olives coarsely chopped

1 spring onion finely sliced

Salt

Pepper

Optional: garnish with microgreens

Instructions 

Drain the mussels and coarsely chop them. Mix the mussels in a bowl with cream cheese, black olives and spring onion. Season with salt and pepper. Transfer the spread to a glass jar and serve with toasted baguette.
