Farm Happenings for September 2, 2024

There is no corn in the share this week.  That's unusual for August. Our corn is yielding very poorly right now becsue we are experiencing the worst smut infestation that I have ever seen. Corn smut is a fungus that infects all parts of the host plant. The infection causes the corn kernels to swell up into galls, whose tissues, texture, and developmental pattern are mushroom-like. The galls grow to 4 to 5 inches in diameter. The galls are considered a delicacy in Mexico, where it is called huitlacoche. Around here it's not too common on the dinner table, so we normally leave it in the field. However, I'm adding just a few of them into the CSA for this week. They won't go into anyone's box by default, but the adventurous amoung you can swap/add them into your box and give it a try! I'm not even giving you a recipie, so you'll have to let me know if you find a good one.
