What is this crazy looking vegetable? It is a celery root! It is a delicious substitute to regular celery during the winter. Celery root is not the root of a celery plant, but actually it's own plant. Because it is a root is stores really well. Peel and chop it. You can roast it, use it in soups even eat it raw!
