Certified Organic Wheat and Barley Flour - Myrtle Creek Farm
- Organic Tesla Wheat Flour: Tesla is a hard white wheat flour that stands out for its premium baking characteristics. It has a high protein content and creates a smooth, elastic dough perfect for sourdough breads, pizza dough, rolls and buns.
- Organic Umpqua Red Wheat Flour: This hard red wheat flour is an excellent wheat for baking bread. It has a high protein percentage which in turn gives a higher gluten content. This improves the dough mixing and handling characteristics and produces a loaf with a tender crumb and wonderful flavor. The milled four is excellent for use in bread, pizza dough and hamburger buns.
- Organic Red Fife Wheat Flour: This heritage hard red landrace wheat used to be the preferred bread wheat of North America. It almost disappeared from production during the Great Depression but has come to the attention of today's artisan bakers because of its complex, nutty flavor, moist crumb and high gluten content. Perfect for use in bread, pizza dough, sweet breads or rolls.
- Organic English Squarehead Wheat Flour: A soft red wheat, English Squarehead is an amazing pastry flour. It makes pie crusts that have flavor and yet are easy to work with and roll out. This soft wheat flour can also be used in biscuits, tortillas and pasta or can be combined with a hard wheat flour to make an all-purpose blend.
- Organic Streaker Barley Flour: This special barley variety was first released by the Oregon State University Barley Project and is named “Streaker” due to its hulless characteristics, which means it does not require dehulling after harvest. Barley flour is high in fiber and with a nutty flavor, is a wonderful addition to any baked goods. Just substitute ½ cup of barley flour in place of regular flour in pancakes, biscuits, muffins and breads.
