Welcome to week TWO! We're a little deeper into winter, the days are a little shorter, and we even have a little snow, so it's safe to say we're in winter mode here on the farm. We've been working on "get ahead" projects starting this week: tweaking high tunnels, covering some over-wintering crops, and planning, planning, planning. As a family with an almost-2-year old, we're also getting more excited about Christmas than usual and have been fully indulging her in her new found love of Christmas lights - our den looks like the botanical gardens right now. We'll be taking the whole week of Christmas off (like all the way off - out of office email, fun plans daily, lots of sleep) so we're really getting excited for the break and brainstorming some fun things we can do. Sometimes your brain gets so into farm mode, you actually forget what it is you like to do with time off, and we're really looking forward to reacquainting ourselves with hobbies and free-time. Hopefully we'll still be able to find some good x-country skiing snow!

Important note! The delivery this week is our last before the New Year - while our winter schedule is generally every other week, we take both the week of Christmas and the week of New Years off from deliveries to give ourselves and our staff a bit of a break. Deliveries will resume the week of January 4, 2021. See the full delivery schedule for the rest of the season listed below at the bottom of this email!

Don't Miss Veggie of the Week...TATSOI
This green is cold-hardy and so so tasty. It may be a little unfamiliar as a stand-alone green, but in it's baby form, it is common in Asian Mesclun mixes. It is tender, with the texture common of full-size spinach, but with the flavor of a non-spicy arugula, nutty and sweet. It's a farmer fav here. The greens are wonderful in salads, and the greens and stems are great in stirfries!

Our new Office/Operations Assistant Sarah! - Sarah has been with the farm for about a year now, and in that year she has been a jill-of-all-trades - deliveries, greenhouse management, harvest team and now - she's saving our butts in the office management roll. She'll be helping us to offer all of you better and more timely customer service, a wider, awesomer range of add-ons, and generally helping Eric and I by keeping things running smoothly. We couldn't be more excited to have someone we trust and like so much in such an important roll on the farm! Join us in welcoming her to this new and exciting role! You'll be hearing from her soon!
