Wowwy, we are cruising right through winter now! We officially left the darkest days behind us when we hit the end of the "Persephone period" (the yearly window where daylength is shorter than 10 hours) on February 5th. By the end of Winter deliveries we'll be darn close to the equinox and be nearing 12 hours. Speaking of the end of winter deliveries - if you have shares on hold, please remember to reschedule them in the coming weeks before our last deliveries the week of March 15th!
These longer days mean there is enough solar energy and daylight to kickstart some of our already harvested winter greens. With a little luck from the weather gods and goddesses, we'll see a return of kale and chard and a surge of spinach as all those little plant kick back into gear!
We've had a kind of crazy week on the farm, as we adjust to snowy days and more frigid cold. Our crew has been A+ adjusting to schedule changes brought to us by the weather and working extra hard this past week to make sure whatever weather comes our way this coming delivery week, shares are ready to go on schedule.

Vegetable of the Week:
Kohlrabi!
I suppose if I convince like just 10 people to eat more kohlrabi on a regular basis, I will consider my life as a farmer well-spent, so hopefully you'll give this wonderfully yet under-rated veggie a shot! Commonly eaten in German food, but also all over the world, this veggie stores like a champ, and is a great stand in for carrots in any salad, platter, or roast. Don't get me wrong, the flavor is different, sweeter, like a cabbage-apple, but it is crunchy raw and also wonderful cooked, so it can be truly all-purpose. I haven't found a use for it in a smoothie yet, but we can't hold that against it.
In the summer, your kohlrabi comes with kale-like leaves, but in the winter, it's all "meristem." The tender juicy flesh inside the green skin is wonderful chopped into a salad or stirfry. It has a mild, sweet flavor and lots of good crunch. I prefer it raw, but it is also good grated and fried into fritters or sliced and diced into a salad. Give it a try for me, your farmer! And for your, because chances are you will like it!
