This week we began harvesting the first of our onions. All the different onion varieties seeded back in March are now telling us its time to get them out of the field and into our drying building. There's still a considerable amount of work left to collect, bring them inside, clean them up, and then prepare them for distribution, and storage. The onions you'll be getting this week were just harvested and will probably be some of the best tasting onions you've ever had. I've had onions in storage for my own use up to a year and they're still always excellent to cook with. However, like anything else when it's fresh picked the flavor is a million times better than an older specimen. Cooked or raw you'll find all our onions a pleasure to eat. The good news with social distancing guidelines in place and having to wear masks we can eat onions raw in relief with no concern for breathing in someone's face. Why? Because onion are loaded with nutrition, they're high in antioxidants, and they can offer a good boost to your immume system. So now's the perfect for the time to put more onions into your diet. We should all be eating more onions. Won't bother me!
