Hope everyone enjoyed the long weekend, and maybe got a chance to share some of our veggies in dishes that where cooked! We are very inspired right now to try out new ways of cooking eggplants: charring them on the stove tops before chopping and adding them to our tomato sauces adds a yummy smoky flavour and creamy texture. Or stuffed eggplants are another adventurous yummy way to explore the various ways of cooking with eggplants.
