Back when mountain folks had to scrape through the winter on whatever food they had preserved in a spring house, wild leeks called ramps were a welcome sight. Popping up on hillsides up and down Appalachia, they are rich in vitamin C and their complex but delicate flavor partners well with many of the other foraged springtime delights, like trout and morels.
Much like ginseng, most families who have roots in these mountains keep a ramp patch. Using traditional harvesting methods that don't deplete the crop, these patches have been carefully cultivated for generations. Fortunately, many of those folks also happen to be TRACTOR growers, and we're happy to share this special part of our home with you!
