Happy First Winter CSA!
We are excited to have you all along with us for the winter. We have lots of fun winter crops to share like Brussels sprouts, cabbage, kale, rutabaga, daikon radish, dry beans, onions, shallots, leeks and winter squash galore!
I really love winter veggies because they really lend themselves to hearty and cozy meals. And they come at a time when the weather pushes us inside and the shorter days mean more time to slow down and cozy up around the table with a good meal.
So we hope this winter you enjoy the chance to cook and savor the flavors of both new and familiar fall and winter veggies. Thank you for choosing to participate in the experience of seasonal eating in a distinctly different season.
You can also feel great about your choice to eat along with the season this winter because it is a very healthy nutritional choice, feeding your body in tune with the season. The veggies of fall and winter have a different nutrient profile which correspond with the needs of your body in the winter season with lower temperatures, shorter days and generally less activity. Types of food we eat in winter often require longer cooking time to break down the vegetables and make the nutrients more readily available. They are also generally eaten hot which is good for your body in the cool seasons.
The winter shares are only offered every other week, but they are filled with crops that store well in your pantry or fridge. So we we will be sure to add plenty of extras you can stock up to carry you through to the next week's share!
