This week we've started digging our fall and winter potatoes. We've had our early potatoes available for over a month now and are nearly out of our red potato and our yukon gold potatoes. This year we were able to source some fingerling seed potato so we're excited that our fingerling potatoes are back this year.
Our fingerling potato is called "Amarosa" and it has a pink skin and pale pink flesh. Amarosa is our favorite potato due to it's beautiful appearance and it's rich, creamy flesh. We especially like to roast Amarosa but they can also be mashed or fried. We're also excited because our potatoes are producing extremely well. We harvested almost 900lbs of potatoes in one day and that was only about one third of the total amount we have planted.
We also grow a white potato with thin skins called Dakota Pearl. This potato is a great all around potato and is particularly good when fried due to it's lower moisture content. Like our fingerling, our white potato is producing extremely well and we will have a lot of potatoes available for our shares and market stand.
