Black beans, winter squash, canned whole tomatoes, onions, potatoes (for meat lovers add sausage) all go together great and we have all the ingredients in this week’s shares! Browse the Extras for items to round out your menu, bagels and cream cheese, eggs, fermented krauts, yogurt, all make a great addition to this winter comfort food.
Black Bean and Butternut Squash Stew
Ingredients:
1 tablespoon coconut oil
1 medium onion, chopped
1/2 medium red bell pepper, diced
3 cloves garlic, minced
2 green onions, chopped
2 cups butternut squash, peeled, and cut into 1/2 inch cubes (any winter squash will work)
1 1/2 cups cooked black beans
1/2 teaspoon Italian seasoning
2 sprigs thyme
1 cup coconut milk (use your imagination for a local substitute!)
1 cup vegetable broth
1 vegan bouillon
1 cup tender collard greens/kale/spinach, chopped (optional)
1/4 teaspoon Cayenne pepper
Pinch of allspice, (optional)
Instructions:
1) Heat oil in a large pot over medium-high heat. Add onions and bell peppers cook and cook until onions are soft, about 3 minutes. Stir in garlic and spring onion and cook for 1 minute
2) Add butternut squash, black beans, Italian Seasoning, thyme and stir to coat. Stir in coconut milk, vegetable broth, bouillon cube, allspice, cayenne pepper and bring to a boil, then reduce heat to simmer for 20 minutes.
3) Stir in leafy greens and cook for about 4 minutes, delicious served with brown rice and avocado.

Update from South Paw Farm
Things have been enjoyably quiet on the South Paw Farm front. We have been digging into the financial aspects of our business and fine tuning our crop plan for 2021. In this winter dormancy, we’ve begun several big infrastructure projects to support our growth. Last week we furnished a new roof for our shop—home to our new solar array! We’ve also started working on the expansion of our walk-in coolers for super cozy storage space for more winter crops next year. Along with removal of brown-tail moth nests and cutting firewood, we’ve been enjoying earlier and earlier winter sunrises and playing in the snow.
