We have a wide variety of times for you to choose from. Now that the weather is finally warm (maybe we skipped warm and jumped straight to hot), I recommend making Carrot and Kohlrabi Slaw, a simple, healthy dish that stays and stays in your refrigerator.
Carrot and Kohlrabi Slaw: Peel and shred a kohlrabi bulb. If you have a food processor with a shredding blade, this is the easiest way to accomplish this. Trim and wash four or five carrots and shred in the food processor. Place shredded vegetables in a large bowl and dress with red wine vinegar and salt. This can be done to taste, but as a guideline, I start with a tablespoon of vinegar and a quarter teaspoon of salt. Then I taste and add more.
This is good as a side dish and can also be piled on a sandwich or burger.
