We are anticipating cooler weather with great delight. In celebration, you have green things back in your boxes. Here are some suggestions if you go for the mustard greens.
- Make a roast beef, chicken, or ham sandwich. Use mayo instead of mustard and stack slivered mustard greens on the sandwich.
- Cut the mustard greens into small slivers, a julienne cut, saute with butter, and mix with scrambled eggs. The easiest way to julienne greens is to roll them into a tight cylinder and cut crosswise
- Mix julienned greens with mayo and spread on grilled fish
They also add spice to potato salad, and I have seen recipes in which they are added to smoothies. I have not yet been brave enough to add them to my morning smoothie.
