We continue with planting. We planted the first of the tomatoes this week in our high tunnel. Potatoes have sprouted, and we have ordered lots of seeds for green beans in anticipation of the coming warm weather.
We continue to be a green machine and have some new products--collards, green garlic, bok choy, and Siberian kale. You might want to try making
Collard or Kale Slaw-- 4 servings
- Greens: 12 ounces collard greens, kale, or mixture. Wash, remove the central stem, drain, and cut into thin strips.
- Dressing: 1 Tablespoon olive oil, 2.5 Tablespoons balsamic vinegar, 1 teaspoon sugar, and ¼ teaspoon salt. Add pepper to taste Toss greens in the dressing and refrigerate.
Variation: Add 1 clove of garlic and 1 tablespoon onion or leek finely chopped to dressing.
This will keep in the refrigerator for several days and is good as a side dish or on top of a hamburger, hot dog, or some rice cooked with chicken broth. Adding chopped boiled eggs and pieces of cooked chicken can make it a light dinner or lunch.
