Hello CSA Members. We hope you have had a good week. The last week of April and this first week of May have been cool---almost qualifying for what is sometimes called a "blackberry winter" which is roughly translated to mean a spring cold snap that causes blackberry bushes to put out new canes.
We have several new products this week--Siberian Kale and Red Beets with tops. It is also the first week for parsley.
Here is an easy and very popular recipe for beets...called Amazing Beet Salad. The name comes from confirmed beet haters liking it. I credit the garlic. '
Amazing Beet Salad 2 cups beets, boiled, peeled, and cut into ¾ inch pieces 2-4 cloves garlic, minced 2 teaspoons red wine vinegar 1/4 teaspoon salt Mix and refrigerate.
It lasts a long time in the refrigerator and ages well.
