I hope you all had a great Easter with family and friends. Here we attended our annual Good Friday Walk at the neighbors, and then carried on with the annual Spring cleaning. There is a lot to do just to get ready to hit the fields!
We have fun offerings this week; including dried beans, frozen garlic, and our dried Soyabeans, scallions, and 1/2 lbs bags of our kale!
I realize that perhaps some of the weird and wonderful may be a little intimidating so I decided to include this adjusted recipe I used for our dried soyabeans! It is a version of a Betty Crocker recipe adjusted to suit our availability!
Soyabeans & Rice
1 to 2 cups dried soyabeans (I soak and rinse these guys for 48 hours changing the water daily.)
2 cups of rice ( That I cooked in a rice cooker!)
I combined the two above ingredients in a large pot, with a cup of chicken broth & 500ml of our tomato sauce and let simmer.
In a separate frying pan, I put pork lard (I render ours for cooking.) and sauteed onions, garlic, carrots. Then I wilted swiss chard in the pan. When they where the texture I desired I mixed them in with the rice & beans.
I cooked sausages in the oven then chunked them up and mixed them as well.
Voila! A complete and delicious meal, with lots of nutrition.
I will admit I don't use exact measurements I just eyeball everything, and run with it tasting as we go so I know when it is appealing to our family! Hope you enjoy trying something new.
