Hello Farm-ily!
Ya know how when the veggies are in your fridge you're inclined to eat more of them? And the more you eat the more you want?
I was noticing this the other day...I have a HUGE fridge (the walk in cooler lol) where I can access most any of the veggies we grow...and yet when it's time to cook dinner I'll use what's in the house fridge because it's there, it's convenient and it needs to be eaten.
Do you notice you just eat cleaner during CSA season?
I eat a salad every day this time of year. Sometimes lunch and dinner.
We're still going strong with salad mix & spinach, turnips, kale and chard. The cilantro, parsley, mint and rosemary are perfect this week. There are even a few cucumbers from the tunnel!
On the horizon: cherry tomatoes from the tunnels.
It's definitely salad season so try your hand with a homemade salad dressing.
My favorite salad dressing:
Balsamic Vinaigrette
In a 1/2 pint mason jar add 1/2 olive oil, 1/3 balsamic vinegar, 1 Tbls honey and a pinch of salt.
Shake it up and toss it with salad mix, sliced radishes, carrots, diced raw hakurei turnips, toasted walnuts and some gorgonzola cheese. YUM!
I often make this in a pint jar and leave it on the counter so it's ready to use for my daily lunch salad.
