It was finally dry enough to get in the fields this week!
We are happy to say that we direct seeded carrots, beets, radishes, turnips, cilantro and dill...and the big news is that we are starting to transplant into the field too!
In the above picture Erika, Kasey, and Trevis are transplanting green kale using our water wheel transplanter. This relatively simple machine makes planting much easier and faster for our crew. Plus, when you have 3,600 kale plants to put in the ground you want all the help you can get!
This is week 2 out of 8 of the Spring CSA and we've got some lovely salad mix headed your way in the share this week.
Micro greens are always on the list this time of year, so don't be afraid to give them a try on just about anything you are eating. The Micro Salad Mix is mild enough that it can be a snack on its own or an addition to any dish you are making. My kids love it (and trust me they don't eat all the veggies I give them)!
Not sure what to do with all those root veggies? The simplest way to eat them is roasted! Cube any mixture of root to the same size, mix them in a large bowl with olive oil, salt, pepper, and garlic and the spread the mixture on a sheet pan and roast at 350 degrees for about 45 minutes or until fork tender. Easy peasy! Eat them that day, or as leftovers for the week.
