Hamburger meat is always a problem fro nose-to-tail butchers. There's just a lot more to a cow than ribeye and roasts. We buy whole cows from BF Farms about every-other week, and our butcher, Julia, cuts and packages them in house. This is some of the best, freshest beef you could buy. But we always have too much ground beef because there's about 200 pounds of it on each cow.
