We're SOOO close to having fresh greenhouse grown produce! The cherry tomatoes and cucumbers are calling to us to eat them....but not quite yet. One VERY special item we have this week can't be grown on a farm, it's only found in nature, and that's MOREL MUSHROOMS!!!
Our friends at Far North Fungi have been busy in the woods hunting down these tasty little treasures. They have a very limited season, so now is the time to get them! Never tried them? They are so. Frickin. Good! They are nothing like the bland button mushrooms you get in the store. They have a strong umami flavor that's slightly nutty and almost meaty. The classic way to cook them up is to fry them in butter or to batter and fry them. (Hard to go wrong with either of those cooking methods!)
Pasta is back this week as well. And what a great pairing....mushrooms and pasta! That's exactly what we had for dinner last week after we harvested a bunch ourselves. Grilled steaks and fettuccine with grilled asparagus and sauteed morels.
We only have a few more weeks of Farm Stand until we start our subscription Farm Share boxes for the summer.
