I always get excited in early winter because it's when I get to call Mark at Rempel Family Farms and order our first cases of parsnips for the season! Although lots of root veggies grow well in Alaska, parsnips are not one of them. They are actually quite difficult to grow here because they require a very long growing season, which we don't have. The Rempel's are one of the few farmers up here who have it figured out though and I'm glad they do! If you've never had parsnips, they taste similar to carrots in their sweetness, but have a slightly more nutty, earthy flavor. I would highly recommend roasting to bring out their unique flavor. Perfect for hearty, warming winter meals.
