Week 8
This week we'll finally be digging our potatoes! When the potatoes are young and "new", it is necessary for us to dig them by hand, as their skins are very tender and scratch off easily. For the first couple of weeks, we'll continue digging by hand until the skins firm up. After the skins are firm, we can use our tractor-mounted harvester to dig and lift up the potatoes and sift out the soil. Our recommendation for our potatoes, is to keep them in a bag in the fridge. The new potatoes do not have the tough skin of potatoes typically found in the supermarket, thus requiring them to be kept refrigerated and retain their moisture by keeping them in the bag if you don't plan on using them in a few days.
