if you are wondering what in the world to do with a ginormous broccoli, I have a couple of ideas. First of all, be sure to wash your broccoli thoroughly. We gave it a field washing, but, that isn't usually adequate for the table. If you gently steam the broccoli and find it is to much to consume...freeze it. Next winter when green veggies are difficult to find you will be happy with that move. Or you can try this salad recipe I am preparing for the "Produce Squad" tomorrow for lunch.
CRAISINS BROCCOLI SALAD
5 C. broccoli florets cut into 1/2" pieces 1/2 C. chopped red onion 1 C. shredded sharp Cheddar cheese
1 C. cooked bacon pieces 1/3 C. sunflower kernels 1 1/2 C. Craisins
Salad dressing:
1 C. mayonnaise 1/4 C. sugar 2 T red wine vinegar
1/2 t. salt 1/4 t. pepper
Combine all salad ingredients in a large bowl; mix well. Combine dressing ingredients in a small bowl. Mix thoroughly. Add dressing to the salad and mix well. Cover and refrigerate for at least one hour. Toss well before serving. Makes 8-10 servings.
Oh ya, if you didn't receive your cucumber....sorry....some of them got to cold in the cooler and turned into slime. Live and learn, i guess. Have a great evening.
