It’s feeling a lot like fall out here at the farm. The tomatoes have died, things are starting to change colors, the rain is setting in and it’s much cooler. We are transitioning beds over to winterize and prepping for our garlic planting this week. We’ve been preserving like crazy! Dehydrating, freeze drying, and freezing lots of veggies for later use throughout the winter.
On the list this week you’ll find a few different types of winter squash. Blue Hubbard and sweet meat are some of the longest lasting winter storage squash that you can get. They range from 12 to 15 pounds a piece and have a delicious flavor similar to a pumpkin but sweeter. An excellent crop to feed you throughout the winter. We also have some butternut squash on this week.
Another really fun product that we have for offer now is the A-to-Z salsa that was made in collaboration with Buckman Brines in Portland. It is made with fermented apples and zucchini. It is similar to a kraut but with a much more complex flavor -a little bit sweet and a little bit tart. It is absolutely delicious and we’ve been putting it on everything from salads to bratwurst.
