This week at Harvie we’re dreaming of all the amazing recipes we can make with fresh fennel. Fennel can fly under the radar and feel a little unfamiliar to some, but if you’re a fan of anise flavors, then this is the veggie for you.
We’re making Shaved Fennel Salad with fennel from Franklin Sustainable Farms and almond butter vinaigrette with almond butter from Georgia Grinders. The beauty of a fennel salad is you can mix and match so many ingredients - from savory options like pine nuts or pistachios, to sweet flavors like dried cherries or peaches. For an easy and nutritious dressing, mix equal parts almond butter, balsamic vinaigrette, and water. You can also throw together a quick Pequea Valley Farm yogurt dressing if that suits your tastes. Shaved fennel salad = side-dish win.
