The Harvie Take on the Fish Fry

Posted on February 23rd, 2022 by Harvie Admin

2022 Pittsburgh Fish Fry lists are starting to drop. The modern fish fry originated from the pre-Easter holiday (Lent) that encourages participants to not eat meat on Fridays. Over the years, it has become a mid-western cultural staple that Pittsburgh restaurants love to put their own spin on. Almost every organization in the city has a fish fry.

Our proposal: no need to wait in line at a fish fry (or at any grocery store). This year, try whipping up your own version of this midwestern tradition. Below, find some recipes and features for the Harvie take on the Fish Fry. Try out your own? Tag us @harviefarms or #cookingwithharvie.

Recipes of the week

Trout Fry - The Harvie take on the fish fry is a Laurel Highlands "Trout Fry". Try this cornmeal breaded trout to kick off fish fry season.

Haluski - You’ll definitely need to stock up on some Minerva butter for this Polish Staple.

Mac & Cheese - this dish is the perfect fish fry side or can be served as a main course. We’ve tried this recipe with the Clothbound Cheddar from Jasper Hill and it’s delicious.

Barmy Soda Paloma- Our Barmy Soda Paloma recipe has been made with several variations in the member Facebook group. Grab some ingredients this week so that you can try your own iteration!

Weeknight meal from Lucy, Harvie HR- sticky rice, soft eggs, and pickled veggies (daikon radishes, shallots, carrots, and ginger). Harvie Hack- try pickling veggies with the Keepwell Rice Vinegar.

Brendan and Eliza Benson of Barmy Soda

It’s quiet in the back of East End Brewing Company. The 20-barrel brewing operation, separated from its buzzing taproom by a bright red door, is simmering at a light hum, the super-sized, steel tanks sitting quietly for the night under the gaze of the brewery’s unofficial mascot (and the face of their flagship beer, Big Hop), a frog.

But, there are two people left in the space after brewing hours: head brewer Brendan Benson and his wife, Eliza, the team behind the sparkling, small-batch, hidden gem,  Barmy Soda Company.
