Fall veggies are in full swing, and starting to get heavy. Something I have been thinking about this week is the types and variety of different vegetables. When you go to the grocery store you will often find only one type/colour of veggie. Orange carrots, round purple beets, round red radishes etc. It is satisfying to see a colourful soup, roasted veggies in a tray, salad, or even just toppings for burgers, falafels or sandwiches mixed with all the different colours. The different shapes can make a difference too. We have spiralized daikon radish as a substitute noodle, which you couldn't do with the little red guys.
