It's Garlic Scape season!
These are the curly stems that grow out of the tops of garlic, and if left alone they become of flowering part of the plant. These garlicy stems can be used the same way you use regular garlic, or if you want to get creative, try grilling, on pizza, quick pickled, or in pesto.
The reason we pick these off is to redirect growing energy from the flower back down into producing a larger bulb. If you don't remove the scapes the bulbs are much smaller. And though picking these scapes seems to take forever, they last forever in the fridge, and are only around for a few short weeks, so enjoy them while they are here.
