I wanted to talk a bit about micro greens and give a little bit of information about their benefits, how simple they are to grow at home and some of the ways that we have used them. So, I have always known they were good for you, in the way that I also know that many other veggies are good for you. But, according to a few articles I read, as well as anecdotes from others, I didn't know the specifics, and it is interesting.
Obviously, not all micro greens are created equal in terms of nutritional benefits, but all the ones that we grow regularly (Peas, sunflower, radish, broccoli) are bursting with the micronutrients essential to healthy living.
A couple of quick examples:
Sunflower vitamins D and E and a good source of complete protein and good fats
Radish vitamins A, E and K 100gms of these guys is almost %50 of your RDA of Vitamin C
Broccoli good source of sulforaphane and carotenoids antioxidants
These little greens are easy to use in salads, wraps, sandwiches, garnishes, on eggs, and I saw someone hint at sunflower micro green guacamole.
