Hello and how's it going? It's a beautiful Friday afternoon as I sit to write this newsletter. The planting and harvesting cycle continues. The crew is busy transplanting a lot of crops that will be ready to harvest this fall. We are even beginning to think about what will go into our greenhouse for the winter.
This week we want to feature our edamame soy beans in many of your boxes. This is a specialty Asian vegetable that we will have for just 2-3 weeks this summer. As you probably know, edamame are often served with sushi, but are great as a snack or side dish on their own as well. There are many helpful recipes online, but the important part to know is that you simply pull the beans off of the plant and cook them in their shells with salted water for 3-5 minutes. We hope you enjoy them!
In addition to our CSA and restaurant accounts, Rivendale also has strong relationships with the Pittsburgh sports teams. Right now, we are busy supplying the Steelers training camp with as much food from the farm as we can. The team eats a lot, and we love sending them all kinds of fresh food grown and produced right here on the farm. Check out their practice jerseys, and you'll notice they have a Rivendale patch on their shoulder. A pretty cool partnership!
