Hello Rivendale CSA members. It's Friday afternoon, and the sun is shining--a very welcome sight. Our fields are still muddy from the wet September, which means we haven't had a chance to do tractor work in a while. But there's still plenty to do, so we keep on keeping on.
Last week and this week we have introduced fresh pink ginger (pictured) to the boxes. This tropical treat is grown in our greenhouse starting in May. It loves the summer heat indoors. And now that the weather is cooling off, it's a great time to harvest it.
Unlike dried ginger in the store, this ginger has no skin to peel. Simply chop and cook. Or consider making tea. And don't throw away the trimmed tops. They are great for adding flavor to a dish too. Cook with them as you would a bay leaf and then remove before serving.

ps--Harvesting our ginger now and into the coming few weeks will allow us to plant our winter crops in the greenhouse before the days get too short. Timing is key for growing winter crops.
