Hello! Especially happy to be harvesting delicious vegetables for you this week as the sun shines and growth kicks into high gear. Your weekly pickups are slowly gaining weight as we move from leafy greens into products with more substance.
I'm not sure about the rest of you, but my family and I are taking advantage of these fresh veggies like never before. We are scrambling fresh herbs into our eggs, frying radish greens, beet greens and onions up into delicious dishes, food processing leafy greens up and adding them to unsweetened pancake mixes for savoury pancakes that we eat with sausage for supper, and massing our kale into salads that we sprinkle with parmesan and drizzle with home made caesar dressing. It takes creativity and some effort but in general we find that the less complicated the dish, the more we are able to enjoy the produce. We eat relatively simply at home and our food tastes great and leaves us feeling fantastic.
