Joe at Joe's Farm let us know he has a bounty of cabbage this week - Nappa cabbage and bok choy to be specific. These are slightly rare finds in the vegetable universe of Oklahoma, and they have a short season, so having too much of them is a rare treat. How to use them? A stir fry comes to mind, and Nappa cabbage makes a beautiful salad (it is softer than the round cabbage heads we're accustomed to.)
We also have too much of another unusual item: DAIRY FREE beef and bean burritos. We left the cheese out of this batch, so those of you who are lactose intolerant can indulge.
