Farm Happenings for July 23, 2019 and July 27th

Hello members! Boy has it been a hot one ! 

This week we have had a lot of unique vegetables in box! 

Here are two recipes that my wife loves:

Stevia Bunch:

This an a plant alternative to sugar.  Commercially you might have seen it as 'Truvia' in little sugar packet.  You can steep the leaves in hot water and let it sit in the fridge for 24 hours.  Strain out the leaves and enjoy it as a 'simple syrup' in ice tea, cocktails or anything else that needs a little sweetening!  

 

Stuffed Squash Blossoms:

Filling:  Add 1 cup of ricotta, 1/2 cup of grated parmesan, 1/2 cup of shredded mozzarella, add a pinch of salt, pepper, and garlic powder.  You can chop in fresh parsley or basil if you have it handy.

Batter:  1/2 cup of flour,  pinch of salt, and 3/4 cup of cold seltzer. 

Heat canola oil for frying.  Meanwhile, gently open the squash blossom, fill with about 1-2tbsp of filling and gently twist closed.  When all blossomed are filled,  dip blossoms one at a time in the batter and place immediately into the oil.  Fry for 2-3 minutes until golden brown. Drain on a paper towel, sprinkle with parmesan cheese and serve immediately with tomato sauce. Enjoy!
