We got to visit Pam's Carrots this week to check out the much anticipated carrot harvest! They hand harvest all their carrots because they use a variety that is so tender and sweet. The green tops are pulled off right there in the field and the carrots themselves are put into buckets. Once the harvest is done for the day, all the buckets are brought inside to be stored. Carrots, like most root veggies, store better unwashed, so they run them through the washer as needed to get bagged up for you! Carrots can store well into winter; we usually have them until about February or March.
