Let's talk about nose to tail eating!
There is more to each of our animals than just the prime cuts you are use to. We like to practice old beliefs which are that the whole animal should be used in appreciation of what they give.
Now, we do not expect you to dig deep into some indigenous roots and start tanning beef hide in your living rooms to create leather! We do however encourage you to explore some of the extras known as 'offals'.
As we raise Beef, Pork, & chicken, some offals available to you are;
- Chicken: Giblets (neck, gizzard, heart, liver)
- Beef: Bones, Tongue, Heart, Tail, Liver.
- Pork: Jowels, Heart, Tail, Tongue, Hocks.
Other organ cuts not preferred by us as the consumers are used for many other products we use today!
Offals are very dense in nutrients such as iron and protein! With some practice, cooking offals can be easy & can be rather tasty.
So we encourage you to look for these items in the swap or extras section and give them a try, harvie often has recipes for your assistance.
