Week 5 Winter/Spring Cooper's CSA Farm Happenings

Happy New Year to you all! 

We are excited for the 2019 farming season.

This week we are slowly getting back into the grove of things as we opened the new year with some southern sun ! SO, let's talk about the beef cuts that have been available lately. 

As we have transitioned to our own cow calf operation, we are in a period where we have lots of calves growing but none are large enough for processing yet. This means we have to purchase finished cattle from our farming friend who raises his cattle with the same pastured methods. We mention this because some of our cuts have had a lot more fat marbling in them and some of the cuts seem smaller. The cuts will always seem fattier in the winter because the cows do not have pasture, they are now eating bales of hay and a little bit of grain such as corn, oats, barley, and spent grain from the brewery. The cuts seem smaller because our farming friend has some different breeds of cows , they have a different breed of Angus and hereford cows where we much prefer the breed of Angus we currently have, and limousin mixed in. Once our calve cycle becomes regular we will always have the breeds we like. 

On a none beef related topic, Maple Syrup season is coming up very soon ! We will be posting lots of the harvest and boiling process.
