Week 21
Our final seedlings for the 2023 season will be seeded this week, marking a final chapter in our season. There is still a lot of clean up on the farm and more weeks of harvesting , but the end of the season is nearing. This week, we harvested our modest sweet potato planting, which consisted of about 700 feet and 6,000 lbs. of sweet potatoes. Back in the beginning of June we planted tiny little sweet potato plants, which would then go on growing for three and a half months, producing some beautiful roots. We won't have them available this week for everyone, because there is a curing process that they must undergo to transform the starches into sugars, giving them their signature sweetness. We've located the 6,000 harvest pounds in our greenhouse, where they'll be kept around 85 degrees and 90% relative humidity for about seven days.
