Fall CSA Week 2
This week we are anticipating a rapid change from last week with regard to cold temperatures through the night. Last week our final Fall greens plantings made it into the field on time, but we aren't too worried about the cold temperatures ahead because our latest Fall greens can tolerate some freezing temperatures. In fact, the frosty cold temperatures that are on their way will make our greens sweeter in flavor! As a defense mechanism, when plants experience below freezing temperatures, they concentrate plant sugars (which are sweet just like sugar) throughout the plant to protect themselves from the cold temperatures. The result after the plants thaw, is sweeter flavor in the harvested product, all which can only happen when they are exposed to below freezing temps. This phenomenon is unique and typically only occurs this time of year, when we start to experience the seasonal shift and when we have mature plants that require harvesting.
