This is your friendly weekly reminder that your farm stand is now open.
Spring has arrived on the farm. The grass is green, the perennial plants (like sorrel!) are growing and the forest is carpeted with wild ramps.
Ramps will be on the menu this week. As you may know, they are a fleeting spring delicacy so make sure you try them while they are available. Not sure what to do with them? We love them in just about any dish where you would use green onions or chives like omelet, soup or mashed potato but our absolute fave is ramp pesto. I tend to use a bit more parmesan, olive oil and pine nut in ramp pesto and add in some milder herbs like parsley if I have them as they can be pretty potent so start with a little bit and adjust the amount you use according to your taste. The arrival of ramps marks the end of sunchoke season. They are at their best before they start sprouting for the season so we expect this to be their last week on the menu.
