Happy weekend everyone!

This is your friendly weekly reminder that the farm stand is open from now until Monday at noon (yes we have changed the time, based on some great advice from members that 8am on Monday is just too early!).

This week the summer bounty continues with lots of delicious flavours to choose from. 

I have been finding that even though the summer days are long, the list of things that I need to do and want to do is even longer and it is nice to have a few quick and easy go-to recipes for fresh summer food.  

This week we will be having fresh veggies and dip and some of our favourite salads (including our all time fave tabbouleh now that the parsley is in full swing and a new fave, Panzanella, discovered after I forgot to pick up our farm share from our own cooler and our sourdough bread went stale...it was still delicious in the salad, I even cubed and froze some and toasted them up later in the week for a second salad!).

I will also make up some pesto and falafel dough for quick and easy weeknight meals (I make lots of falafel dough and freeze it for even easier meals another time and soak extra chickpeas and pressure can them for almost-instant and completely amazing hummus any time; pesto is also great frozen so go ahead and make a mega-batch and freeze it up for awesome meals for weeks to come!). 

If there is time, I am also going to try to preserve some of the last of this crop of cukes with some of our fresh dill and garlic (sorry no cukes on the store this week, we are harvesting them today but they will be at the market for those of you who visit us there).
