This week we delivered 900 pounds of Napa cabbage to our friends at True Kimchi Cafe in Fort Wayne. Sam and her team received the first 450 pounds on Tuesday morning and got right to work processing the cabbage into kimchi. By Wednesday, when we dropped off the rest of the week's delivery, they already had it all chopped up and fermenting in a 60-gallon drum! We will continue to deliver large amounts of cabbage to True Kimchi over the next weeks. All in all, they will turn around 3000 pounds of our cabbage into kimchi in hopes that it will be enough to get them through until next year's crop is ready to harvest.
While we were at the cafe we were able to get a peek at what they offer. Along with their kimchi, they have a wide variety of Korean pantry staples, snacks, beverages, and groceries. Sam is also keeping the cooler stocked with homemade traditional Korean side dishes, many of which are made with ingredients from our farm. It’s always really fulfilling to see our farm listed on ingredient lists. Getting to see where our food ends up brings us so much joy! Items like radish salad, blistered shitshitoes, and stir fried eggplant were in the case while we were there. True Kimchi Cafe also offers a rotating menu of specialty hot items like Bibimbap, Gimbap, and Tteokboki that you can enjoy in the shop or take to go. And there are plenty of snacks to try (we got the Honey Twists and the Shrimp Crackers while we were there).
The cafe’s hours are Friday & Saturday 11:00am-8:00pm and Sunday 10:00am-3:00pm. Check it out--and when you go, go hungry!
