We have another round of sweet corn ready for this week! If you are interested in storing veggies for the winter, corn is a great option. To prep for freezing, par boil full ears of corn and then dunk them in ice water to stop the cooking process. Once cool enough to handle, use a knife to cut the kernels away from the cob. Bag up the kernels in a freezer safe bag (vacuum bags are even better if you have them) and freeze. We typically put about 1.5-2 cups of corn in each bag so you have one serving per bag in the winter time. We love pulling a bag of corn out in the winter and adding it to a soup or making a corn salsa to go with fish tacos.
