Looking for a new idea for watermelon as we get close to the end of melon season? We like making a sweet and savory watermelon salad as a cool, refreshing side dish. We toss chunks of watermelon with mint, feta, and balsamic vinegar and add salt and pepper to taste. The salad is very adaptable - you could substitute basil for the mint or add a minced jalapeño for a little spicy kick. We have also been using watermelon in smoothies, drinks for the kids, and cocktails. Simply scoop out a watermelon onto a cookie sheet and freeze. Our girls love making a fresh drink with coconut milk, watermelon, and lime juice in the blender.
