It's hard to believe that we are just hitting the halfway mark of the CSA season this week! We have so many great veggies ahead as we start to think about cooler nights coming. This week we have added kale, collards, and chard to the availability list if you are looking for greens to add to your bounty of tomatoes and peppers. One of our family favorites is "garbage spaghetti" and this is a great time of year to make it. We sauté onions, garlic, and olive oil and add in a pack of sausage and whatever veggies we have on hand. You can mix together peppers, tomatoes, and chard or summer squash and toss over pasta and finish with a sprinkle of parmesan. There are so many great combinations you can try and your only limit is your imagination. If you've got pickier eaters in your group this is a great way to chop your veggies small, load up on the parmesan, and sneak in a healthier meal!
