Welcome to the start of the hard squash season! We have added spaghetti squash to the list for this week. We like to use the spaghetti squash as a substitute for pasta in our typical "garbage spaghetti" recipe. We make a quick sauce with onion, tomato, sausage, and whatever other veggies we have on hand (kale is a great choice) and serve it over spaghetti squash.
The easiest way to prep spaghetti squash is to cut it into rings (not in half lengthwise!), drizzle with olive oil, salt, and pepper, and roast in the oven until tender enough to shred it with a fork.
