We have a new squash variety on the list this week - Kabocha squash. This is a new variety for us this year and we are very excited about it. It is slightly larger than a typical acorn squash and is great roasted, pureed in soup, or used as the base for a riff on pumpkin pie. The flavor and texture is somewhere between sweet potatoes and pumpkin. Give it a shot if these cooler nights have you thinking of hard squash!
