It's hard to believe that we are in the second to last week of the CSA season! If you have credit on your account for extra items this is a great time to use it and stock up with fall veggies or storage crops. Sweet potatoes and butternut squash are good choices if you are looking to save something for a couple of weeks.
Our current favorite veggie is roasted cauliflower. We toss chopped cauliflower with olive oil, salt, and pepper and roast at 400 degrees until tender, about 20 minutes. Finish off under the broiler if you want to get some nice crispy bits. This makes a great side dish or can be tossed with pasta, goat cheese, and sausage for a full supper.
